The Good Scents Company file 1,2-di((1-ethoxy)ethoxy)propane under the fruity odour type, describe it simply as "fruity", and give the functional note that it is an aldehyde generator used for enhancing the flavour of orange drinks. It is an acetal rather than a finished aroma chemical: it carries a light fruity note of its own and, under conditions of use, releases acetaldehyde, the pungent ethereal top that gives citrus and red-berry work its just-cut freshness. In a formula it behaves as a slow fuse under the top note, a way of keeping a citrus or berry accord smelling opened rather than a note you would build around, and it is honestly dull on a blotter compared with what it does in the finished thing. Nothing else in a normal palette performs this job, which is why it earns a bottle.
