Specified by Advanced Biotech as a colourless to yellow liquid with an odour characteristic of vanilla. It is neither vanilla absolute nor vanillin but a compounded natural complex, and the spec puts its alcohol content at 76 to 84 percent by volume, with a boiling point of 78 C and a flash point around 16 C, which tells you almost the whole story: this is a vanilla character carried in ethanol, pale rather than dark, and weak per gram compared with an absolute. In a formula it gives a clean rounded vanilla without the smoky, phenolic and resinous weight that a bean absolute brings, and without the flat single-note quality of vanillin alone. Because it is already four-fifths alcohol it is used neat and it contributes ethanol to the batch, which matters when the concentration is being computed. Twelve-month shelf life, so it is not a bottle to buy ahead.
