What does Praline Natural smell like?
A separate product from the Malto-Praline line, specified by Advanced Biotech as a dark brown liquid with a fruity odour and declared in the EU as a thermal process flavouring. It is the lighter of the two houses' praline reaction bases: specific gravity around 1.015 to 1.040 against Malto-Praline's 1.08 upward, a flash point near 32 C that says a volatile carrier is present, and a twelve-month shelf life rather than twenty-four. The effect is a nutty confectionery praline with the fruity top the spec names, softer and less molasses-heavy than the malto grade. In a formula it lifts the sugared-nut facet of gourmand accords without dragging the whole base brown, which is what makes it worth keeping alongside Malto-Praline instead of choosing between them. The short shelf life and the low flash point both argue for buying small and working it diluted.
