What does delta-Decalactone R80 smell like?
Zeon lists this optically active grade as natural, milky, creamy, against the plain racemic delta-Decalactone in the same table which it lists as creamy, nutty. It is the soft dairy lactone: warm milk and cream with a ripe stone-fruit edge and a faint coconut roundness, rounder and less nutty than the racemate. Zeon's stated position is that the odour quality of optically active substances is much superior to that of racemic compounds, and that using the resolved material makes it possible to reproduce genuinely natural flavours and fragrances that racemic material alone could not; the R grade is supplied at 80.0 to 83.0 percent ee, which matches the R-heavy ratio found in peach. In a formula it is the creamy body under fruit and gourmand accords, softening sharp fruity esters and giving skin-like warmth in the heart, and because it is the same substance at a resolved grade a perfumer typically weighs it lower than racemic delta-Decalactone for the same creaminess.
